Move over marshmallow laden yams, there’s a new dish in town! Is it dessert? Is is a side dish? It’s whatever you want it to be! Literally all you need are 3 simple ingredients to accomplish this paleo pie. I was never one to like marshmallows on my sweet potatoes…they were just too, well, sweet! But the sweetness in this is actually quite nice and it only comes from the sweet potato (plus any honey you want to drizzle on top). You can basically customize the sweetness to each person’s liking!

• Egg Free
• Dairy Free
• Grain Free
• Gluten Free
• Gum Free
• Seed Free
• Nut Free (excluding coconut)
• Just 3 Ingredients!
For the Crust:
1 long sweet potato
Coconut oil for greasing pan
For the Filling:
1 can of Trader Joe’s Organic Full Fat Coconut Cream (it doesn’t contain gums!)
1 Tbsp of Further Food grass-fed gelatin (15% off: lilsipper)
Toppings (optional):
Walnuts or pecans
Roasted coconut butter or raw honey
Directions:
1. Pre-heat oven to 350 degrees F.
2. Peel sweet potato skins then slice with a mandolin into thin rounds. Grease pan with coconut oil, then layer sweet potato rounds like so. Bake crust for about 10 minutes until rounds are soft then allow crust to cool completely before filling.
3. Whip coconut cream and gelatin with an electric or stand mixer until cream is firm and fluffy. Transfer coconut fluff into cooled sweet potato crust and refrigerate at least 3 hours or overnight. Before serving, top with nuts and/or melted coconut butter or raw honey to taste.
