Instead of baking this Chocolate (cottage) Cheesecake, I used Vital Proteins gelatin to keep the BILLIONS of probiotics in Nancy’s Yogurt cultured cottage cheese. Cheers to gut health, probiotics, and delicious dessert!

Ingredients:
1 1/2 cups Nancy’s Cottage Cheese
1/2 cup Santa Barbara Chocolate Discs ($10 off: lilsipper), melted (measure before melting)
2 scoops Vital Proteins Gelatin (essential for the recipe)
Optional ad-ins:
1 drop mint extract
2 Tbsp honey
Topping:
1 Thera Treats CBD square, grated (15% off: lilsipper)
Directions:
1. Blend melted chocolate with cottage cheese until creamy. Taste. If you want to add mint or feel it needs sweetness for your taste preference, feel free to add sweetener now then blend again.
2. Next add Vital Proteins gelatin and blend one last time.
3. Pour chocolate cottage cheese puree into desired pan or mold (I used this springform pan, but feel free to use silicone molds or a small pan lined with parchment or wax paper.)
4. Top with grated / shaved Thera Treats Chocolate and refrigerate about 45 minutes. Slice and enjoy!
Store in fridge.
Not sure how long it will last after 2 days! Haha
Do you blend this in your Vitamix? I have a similar blender but it wasn’t able to blend this very smoothly. I kept having to scrape it off the sides.
