COOKIE DOUGH CAKE! Need I say more?
A take off my original Cookie Dough Bread recipe but with a few light adjustments to make these bad boys even “airy-er” (is that even a word?) Guys, I’m hooked!
• Sugar Free (including the chocolate chips!)
• Grain Free
• Gluten Free
• Low Carb
• Paleo
• Keto Friendly
• Candida Diet Friendly
• Easy to Digest
…..and dare I say….addicting!
Ingredients:
3 whole eggs + 1 egg white
1 tsp baking soda
3/4 cup cashew butter (I used Artisana)
unsweetened chocolate chips to taste ($10 off: lilsipper)
Instructions:
1. Pre-heat oven to 350 F.
2. Mix with an electric or stand mixer whole eggs, egg white, and baking soda until peaks form. Add cashew butter and continue mixing a few minutes.
3. Stir in desired amount of chocolate chips and pour batter into desired cake pan, cupcake tins, or bread loaf pan.
4. Baking time will vary depending on type of pan you use. Larger pans will take longer while cupcake tins will take the least amount of time. (15 – 25 minutes) I used these mini springform pans and baked them for about 20 minutes.

Can you use regular collagen and add in vanilla extract?
I don’t have the vanilla collagen (only the plain, the gelatin, & the chicken bone broth one), but will be ordering on next payday. I’ve been doing a lot of smoothies lately (& my gut is thanking me!) & I definitely want to try this recipe!!

Hi Bethany, one question, Can you use and Do you use the Vital Proteins Vanilla Collagen instead of flour in recipies?
no you cannot. It dissolves in water and has no “bulk”
What are the macros for one cake ?

Ahhhhh I’m so excited!! This is a recipe I can finally make !! 😊 I’m not American and often struggle to find a lot of the ingredients you use in recipes here in Spain ! BUT this one I can do !!!! 😍😍 Would it also work with peanut butter and not cashew ? Ekkk so excited !
Technically yes, you can use peanut butter however I always suggest NOT eating peanuts in general as they can cause tons of digestive issues (read this post to know why I don’t consume peanuts) http://www.lilsipper.com/peanuts-why-i-dont-consume-them/
