When you want lasagna, but also soup, but also only have 15 minutes….what to do? No need to worry, I got you!
And thought this is meatless, there’s 20+ grams of gut healing protein since I added Vital Proteins bone broth powder (can be added to literally anything and great for traveling too!).
Plus the additional protein from the chickpea pasta, no need to meat in here – Does this count as meatless Monday?
Ingredients:
1, 17 oz jar of pure strained tomatoes (no citric acid, ingredients should just be tomatoes)
1 cup water
2 sticks (or scoops) of Vital Proteins bone broth powder (chicken or beef)
Desired amount of chickpea pasta shells (Whole Foods brand sells these without any gums or THIS BRAND is also a good option – no gums!)
Seasonings of choice to taste

Method:
1. Heat entire jar of strained tomatoes, water, Vital Proteins organic bone broth, chickpea pasta, and seasonings of choice to taste and simmer until pasta is al dente (about 15 minutes).
- Before serving, top with goat cheese and toasted sourdough if desired.
