I really wanted to make a SWEET N’ SALTY CHEX PARTY MIX but as I was searching for a healthier alternative to the Chex cereal in my Instagram stories, I just couldn’t find any! So I decided to make my own, grain free, paleo version. If I want something bad enough, I WILL find a way! No limits over here….and yes, this was gone in a day.
“Chex” Ingredients:
1 – 2 Japanese sweet potatoes
Coconut oil spray
Sea Salt
Mix-ins:
Hu Kitchen Chocolate Gems (15% off: lilsipper)
Sprouted almonds or nuts of choice
Instructions:
1. Preheat oven to 200 F.
2. Remove skins with a potato peeler and slice into rounds, then cut into a square shape (optional – you can also leave round). Lightly spray with coconut oil and season with salt and place on a baking sheet lined with parchment paper. Bake for 30 minutes, flip, then continue baking for another 30 minutes.
3. Add desired mix-ins of choice and season antire mix with additional sea salt and enjoy!
