Peanut-free “peanut butter” chip chocolate cookies may sound a bit confusing. But if you know me well and follow me on Instagram, you should know I stay away from peanuts for GUT HEALTH REASONS. So whether you have a peanut allergy, nut allergy, or just want to bake some GUT HEALTHY VEGAN COOKIES…..these are your answer!

• Gluten Free
• Dairy Free
• Refined Sugar Free
• Vegan
Ingredients:
1, 15 oz. can of organic beans, drained and rinsed (I used kidney beans but black beans or chickpeas will also work)
3/4 cup Santa Barbara Chocolate Red Cocoa Powder (much richer in taste than typical cocoa powder), 15% off: LILSIPPER15
2 heaping Tbsp of organic Sunbutter (almond butter may also be used)
1/3 cup date syrup (or honey if not vegan)
1/2 cup carbonated mineral water (helps it fluff!)
1 or 2 handfuls of my homemade Sunbutter Chips
Method:
1. Add all ingredients (except Sunbutter chips) to a blender (I used my Vitamix) and blend until a thick batter forms.
*If batter is too runny, add more cocoa powder. *If batter is too thick, add more carbonated water. Batter should be thick but not dry (play around with the consistency)

Mix in desired amount of Sunbutter chips with a spoon and scoop out balls onto a lined baking sheet.

Bake at 350 F for about 15 minutes. Allow to cool before removing from pan.
