I wanted cherry chocolate blondie. So I made cherry chocolate blondies. But with a “hemp-y twist”!
Adding hemp seeds:
• Provided anti-inflammatory properties
• Added more protein and fiber
• Gave the perfect texture
• Provided healthy omega fatty acids
• And gave these blondies some texture so I didn’t have to use flour or nut meal
Win Win Win!
But if you don’t have all the ingredients I personally had on hand, I’ve listed some substitutes below.
Substitutions:
Chickpeas can be subbed with white kidney beans
Pear baby food can be subbed with applesauce, mashed banana, or sweet potato puree
Hemp seeds – sorry! I’m not sure but I’m thinking almond flour may work?
Frozen cherries can be subbed for fresh, or frozen blueberries
Chocolate chips – you can always use raisins or dried cranberries if you can’t have chocolate
Ok, now for the exact recipe!
Ingredients:
1, 15 oz can of chickpeas (drained and rinsed)
1/2 cup pear baby food
1/2 cup Evo Hemp hemp hearts (20% off: lilsipper)
1 cup frozen cherries, chopped
Chocolate chips to taste (I used THESE)
Method:
Pre-heat oven to 350 F.
Blend chickpeas, pear baby food, and hemp hearts until smooth. Stir in cherries and chocolate chips and transfer to a lined bread loaf pan. Spread out evenly. Top with with additional cherries and chocolate chips if desired and bake for about 40 minutes. Allow to cool in refrigerator before slicing.
