Did you know this Cashew Cookie Butter Cake contains superpowers? It has the power to make you think it’s not butter…can you believe it? This Vegan, No Bake, Gluten Free cake takes less than 10 minutes to make….and even less time to eat!
Crust Ingredients:
2 whole food bars of choice like Lara Bars or any other you prefer
Filling:
1/2 cup Nuzest Protein
1/2 cup oat flour
1/4 cup cashew butter
1 cup water
2-3 Tbsp coconut butter (not oil)
Directions:
1. Line a small springform pan (or small dish of choice) with parchment paper and press down bars for the crust.
2. Mix Nuzest and oat flour in a large bowl, then transfer to a blender (I used my Vitamix) and blend with remaining ingredients until smooth.
3. Pour mixture into prepared dish with crust and refrigerate at least 30 minutes.
4. Option to melt chocolate of choice and drizzle before serving.
