PUMPKIN BROWNIE BREAD! And it’s vegan, paleo, grain free, gluten free, refined sugar free, and low carb?! Yes!
But the question still stands…is it a large brownie loaf? Or bread that’s a brownie? DO IT!
Ingredients:
1 cup pure pumpkin puree
2 Tbsp coconut oil, melted
1/4 cup almond butter (any nut or seed butter will do)
2 egg whites (vegans sub. flax egg)
1/2 cup unsweetened cacao powder
2 Tbsp granulated sweetener of choice (optional)
Chocolate chunks of choice for topping (optional)
Method:
1. Mix wet and dry ingredients separately (excluding choc. chunks), then combine together.
2. Bake in a non-stick/sprayed pan for 25 – 30 minutes at 350 degrees F.
