Let’s face it, mac n’ cheese is all about the sauce! And let me tell you, the flavor in this sauce was bangin’! Certainly not your average cheese sauce but who wants average when you can have extraordinary!?
I still kept it healthy and dairy free, but did add some goat cheese (totally optional) at the end. The best thing about this sauce is that you can always adjust to taste!

Ingredients:
1 box of preferred pasta (I used Whole Foods brand Chickpea pasta – just 1 ingredient!)
1 cup butternut squash puree (canned pumpkin will also work)
3 Tbsp organic Sunbutter (game changer!)
1 Tbsp yellow mustard
2 Tbsp unsweetened ketchup (trust me!)
1/4 cup carrot baby food
2 Tbsp ghee (or coconut oil)
1 Tbsp Trader Joe’s Onion Salt
1/2 cup water
*option to add a few handfuls of grated goat cheese or keep it vegan.
Instructions:
1. Cook pasta as directed on box.
2. Blend all sauce ingredients (except cheese if adding) then add to cooked pasta (and add goat cheese if using) and stir over a stove until warmed.
