These 4 ingredient Paleo Hash Browns hit the spot! I’ve been craving more savory lately, in particular tater tots and hash browns. Why? I have no idea!!!! But I’m just going with it….but you know me better than to grab a bag of pre-made tots.
What’s wrong with packaged tots?
Below are the ingredients in Ore-Ida tater tots:
INGREDIENTS:
POTATOES, VEGETABLE OIL (SUNFLOWER, COTTONSEED, SOYBEAN, AND/OR CANOLA), SALT, YELLOW CORN FLOUR, ONIONS, DEXTROSE, DISODIUM DIHYDROGEN PYROPHOSPHATE, NATURAL FLAVORING.
But what about those popular Cauliflower Veggie Tots? They’re even worse!!!!!! Below are the ingredients in Green Giant’s version.

Makes 12 large or 24 small
Ingredients:
1, 12 oz. bag of frozen or fresh cauliflower rice
1/2 cup Otto’s Cassava Flour
1 scoop of Vital Proteins Collagen Peptides
2 whole eggs
*option to add spices and seasoning to taste
Coconut oil for cooking
Directions:
1. Mix cauliflower rice (if using frozen, mix while frozen. Do not steam or the moisture will affect the recipe) with Otto’s Cassava Flour and collagen well.
- Scramble eggs then incorporate them into the cauliflower mixture.
-
With hands, form into desired shape and size.
4.. Heat a pan with coconut oil and cook each side a few minutes until golden brown. I assume you can also bake them but I have not yet tried that and the time will take much longer.
Serve with greek yogurt, ketchup, hummus, or guacamole (they’re also amazing on their own) and enjoy!
What would you dip these with and would you eat them for breakfast or dinner? Comment HERE and tell me!!!
Thank you Otto’s Cassava Flour for sponsoring this post and supporting me and what I do.
First time posting and also the first time I’ve made one of your recipes. These were terrific and So easy to make! I made them in batches and stuck them in a 375Β° oven to keep hot. We gobbled them up and froze the rest. Thank you for such an easy, simple recipe!
Oh I’m sooo happy to hear that you loved them!!! And great idea to make batches then freeze the rest! Perfect may to meal prep!
My family is going to FLIP with joy over these! Haven’t had hash browns in a long while because of the weirdo ingredients. Thanks Bethany!
awww YAY!!!! Well I’m so excited for you all to try them!
Can I sub the cassava flour for coconut flour?
Feel free to try and let me know how it goes hun
The directions say to scramble the eggs, then add them to the mix; do you mean whisk?
yes, whisk, scramble, mix, etc. π
They’re like potato latkes.
Canβt WAIT to make these!! Did you use fresh or frozen cauliflower rice?? I know you said you could use either, just curious which one you used and if you prefer one over the other π
I used frozen
Are these gluten free?
Yes
All you had to do was look at ingredients for answer.
