Paleo, Low Carb, and Keto friendly Fudge…yes! And there’s no added sugar! It get’s even better…it’s super healing for the gut! Win Win!
Ingredients:
1 medium butternut squash (aout 1 cup pureed)
1/4 cup coconut oil
1/2 cup unsweetened cacao powder ($10 off: lilsipper)
2 ½ scoops Vital Proteins gelatin
Directions:
1. Bake squash until super soft (time will vary). Remove skins and seeds.
2. While squash is still hot, puree with remaining ingredients (do not
add any liquid) until smooth. I used my Vitamix.
3. Pour mixture into a bread loaf pan lined with parchment paper and
refrigerate about 2-3 hours or until firm.
How easy was that? And trust me, you won’t need to know how long they
keep…they’ll be gone in a day!
Since butternut squash isn’t in season right now, I was going to use a can of organic butternut squash purée, do you know how many cans I should use?
Hi Sarah,
try 2 cups worth.
Thanks so much!
Is it possible to use pumpkin instead of butternut? Butternut is reallly expensive and hard to find where I live. Pumpkin is much easily accessible and cheaper.
Yes, you can certainly use pumpkin or even sweet potato! 🙂
can you omit the gelatin? Can you interchange it for the collagen peptides or beauty greens?
No, it must be the gelatin hun. collagen doesn’t “gel” – hence the “gel”atin 🙂
I love your post.. ??????
Aww Thank you my sweet friend! Enjoy!
I LOVE this recipe! Already on my 3rd batch! I’m addicted now for life! xo
