You know when you crave bologna late at night after watching the Food Network? Oh, that’s never happened? Well, it did for me the other night and I suddenly had a huge craving for my childhood lust (and also bologna) Haha
But really, I always wanted bologna when I was young but my mother (being the responsible adult she was) always refused and only allowed it on special occasions. Now I know why!
IT’S FULL OF CRAP! Just look at the ingredients below..
INGREDIENTS: BEEF, WATER, CORN SYRUP, CONTAINS LESS THAN 2% OF SALT, GROUND MUSTARD SEED, POTASSIUM LACTATE, DEXTROSE, HYDROLYZED BEEF STOCK, SODIUM LACTATE, AUTOLYZED YEAST, SODIUM PHOSPHATES, SODIUM DIACETATE, SODIUM ASCORBATE, SODIUM NITRITE, FLAVOR, EXTRACTIVES OF PAPRIKA, OLEORESIN CELERY SEED.
So what’s a girl to do? You get a craving, but know the feeling after you have chemicals in your body….sick, sick, sick….for days (weeks sometimes for me) just from one nasty meal.
I remembered I made some Clean Hot Dogs a while ago, so I thought healthy, clean bologna couldn’t really be so hard!
And the next morning….TaDa!

Ingredients:
2 small chicken breasts, pre-cooked (seasoned if desired) I used the breast from an all natural rotisserie chicken from Sprouts.
1/2 cup almost boiling water
2 scoops Vital Protein Gelatin
Directions:
1. Blend Chicken and water until smooth and creamy.
- Add Vital Proteins gelatin and blend again.

Wash and dry a saved BPA free lined can. HERE is a list of BPA free lined cans as well as ones to avoid.

Transfer chicken puree into can and gently tap can on counter to release any air bubbles. Refrigerate can at least 2 hours or overnight.

Turn can upside down on a plate and open other end with a can opener. You may need to squeeze the can to break the mold away from the sides.

Carefully push out chicken mold and slice as desired.

Is it possible to use just standard unflavoured gelatin instead of vital proteins?
Hi Kristina,
Yes it will still work, however standard gelatin such as Knox is made from pork. I suggest reading THIS POST before consuming anything from pork. 🙂
Amazing, i havent eaten cold meats like this in ages because of the ingredients!! So excited to try. Also how long would this be good for in the fridge?

Genius! You have done it again. Just goes to show 1) cravings DO happen 2) We can always find a healthier way 3) there’s a reason you knew to grind up your meat (for post-gym workouts)! It all worked out for the best. I gotta try this now! So good!
