About 2 years ago I discovered Otto’s Cassava Flour and made some pretty cool things like my paleo AND vegan Cookie Crisp Cereal but never got into much after that. Then in late 2017 I was reminded of the stuff and started experimenting with it again and made some gluten, grain, and refined sugar free brownies and Paleo Eggnog Porridge on my Instagram….but I wanted to test my limits and make a bread out of the stuff!
After all this flour is 100%
• Grain Free
• Gluten Free
• Nut Free
• Seed Free
• Paleo
• Vegan
…not to mention it’s non-GMO and kosher certified.
I intended them to be burger buns, but they kind came out like rolls instead! Haha All good because I still think they’d work great as both!
And if you know me by now, you know that adding Vital Proteins Collagen Peptides to everything for GUT HEALTH is like brushing my teeth…it just come naturally. You really can add it to anything and it doesn’t affect the taste and texture, all while adding tons of protein and collagen for your hair, nails, skin, and gut health!

Yields 4
Bun Ingredients:
4 eggs
1/2 cup unsweetened apple sauce
3/4 cup Otto’s Natural Cassava Flour
3 Tbsp finely ground flax meal (I ground my own in a blender from coarse flax meal)
1 scoop Vital Proteins Collagen Peptides (optional – will still work without)
1 tsp baking soda
Topping: (optional)
Egg wash
Trader Joe’s Everything But The Bagel Seasoning
Directions:
1. Blend first 2 bun ingredients in a blender, then add dry ingredients and blend again until a smooth batter forms.
2. Separate into 4 equal parts and form into balls.
3. Place balls on a lined baking sheet and cover with egg wash then sprinkle with seasoning blend (omit for a seed free version).
4. Bake at 350 degrees F for about 25 – 30 minutes.
Store in the fridge AFTER cooling if not using right away for up to 3 days. You can also make a large batch and freeze them.

I just made these! They turned out nice…and of course I have a question. The texture inside is it airy but gooye? Or is it suppose to be completely dry like bread inside? Maybe I made them to thick? Ok, ill wait for your response. Nothing goes to waste in this house, I sliced them in 3 and popped them back in the oven…now they are dry and I have…sliced bread!! LOL 🙂

I figured it OUT! its my brains fault, jijijiji. As soon as I touched that gooeyness I thought of the collagen…it took me reading the recipe like 5 times, searching for what when wrong, to see the recipe calls for Peptides, I used the gelatin. It was my eye, i read Vital Proteins and immediately assumed. As my mother says the kitchen is a laboratory, as soon we finish the sliced buns I shall make a new batch…this time following ALL the instructions!
This looks so good!! I really want to try this recipe but I can’t have apples/applesauce, do you think anything else would work instead?

I made these without the psyllium husk (because I’m out) I replaced it with 3 tbsp flax seed and 1 tbsp chia seed, I just let the blender grind the fla and the chia with the egg mixture and they turned out beautifully! Thanks for the great recipe!
Yummm! I have had problems with psyllium husk in the past, it’s rough on my gut. Do you think ground flax seed would work in its place? Happy you’re playing with ottos, can’t wait to see what else you come up with!

Hi Bethany…just made these (minus the vital proteins) and found that after I added the dry ingredients, the batter was too thick for my vitamix to process for a smooth batter. Any thoughts/ideas?? Thanks mucho grande!

Hmmm the batter came out perfect for me, perhaps you need to add more apple sauce or eggs?

It was really thick for me too- I made it in my nutribullet and it could barely blend. I just took it out and hand mixed it the rest of the way and it worked!! 🙂 maybe it just needs some gold ol’ fashioned elbow grease!
